The Meat Market Manager is responsible for the overall operation, performance, profitability, cleanliness, and customer service of the Meat Department. This position leads the meat department team while ensuring high standards for product quality, merchandising, food safety, inventory control, and customer satisfaction.
The ideal candidate will have strong meat-cutting knowledge, grocery retail experience, leadership skills, and the ability to operate a productive and profitable meat department.
Key Responsibilities
- Manage the daily operations of the Meat Department.
- Supervise, train, schedule, and provide direction to meat cutters and department associates.
- Cut, trim, grind, prepare, package, weigh, and label meat products as needed.
- Maintain attractive, clean, organized, and fully stocked meat displays.
- Ensure products are properly rotated and follow FIFO procedures.
- Monitor product quality, freshness, expiration dates, and proper storage temperatures.
- Place orders and maintain appropriate inventory levels based on sales and customer demand.
- Control shrink, waste, markdowns, and product loss.
- Monitor department sales, gross margin, labor expenses, and overall profitability.
- Establish production priorities and ensure adequate products are prepared for daily business.
- Create and maintain effective merchandising displays, promotions, and weekly specials.
- Ensure accurate pricing, labeling, weights, and product identification.
- Maintain sanitation standards for cutting tables, grinders, saws, knives, coolers, cases, floors, and other equipment.
- Follow all applicable food-safety, sanitation, workplace-safety, and company procedures.
- Ensure employees properly clean and sanitize equipment and work areas.
- Provide professional and knowledgeable customer service, including special cuts and customer requests.
- Help resolve customer concerns related to the department.
- Inspect deliveries for quality, quantity, condition, and accuracy.
- Work closely with store management regarding staffing, purchasing, sales, promotions, and department performance.
- Report equipment problems, food-safety concerns, inventory discrepancies, and other operational issues promptly.
- Perform other duties reasonably assigned by store management.
