Job Summary

Essential Duties and Responsibilities
<ul>
<li>Supervise preparation, quality and quantity of all baked items.</li>
<li> Understand how to work with laminated dough, chocolate, building and icing cakes, wedding cakes and all additional aspects of a bakery.</li>
</ul>
<ul>
<li>Responsible for the day-to-day Pastry operations which includes controlling quality and quantity of produced items, menu planning, hygiene standard, communicating and training of staff.</li>
</ul>
<ul>
<li> Responsible for ensuring every employee is working effectively and efficiently improving employee morale and employee relations.</li>
<li> Communicate new products and information to the team effectively and efficiently. </li>
<li> Leading and managing the quality/quantity of items produced by the Pastry department, coordinating the production as it relates to the Bake Shop and Special Event functions.</li>
<li> Establish, maintain, and control food waste. </li>
<li> Oversee the monitoring of weekly sales and adjusts prep production levels ensuring all food products are ordered to par levels and can make adjustments according to business volumes.</li>
<li> Checks employee's work areas, clothing and appearance, and safe working practice.</li>
<li> Hold meetings for upcoming functions.</li>
<li> Create displays, showpieces, and seasonal attractions.</li>
<li> Ensure product consistency.</li>
<li> Assist in developing new recipes.</li>
<li> Inspect kitchen equipment for cleanliness, hygiene, and monitors sanitation policies to abide by all state food safety and sanitation laws.</li>
<li> Recruiting, selection and on-boarding of sous chefs and pastry chefs.</li>
<li> Implements &amp; coordinates the culinary function.</li>
<li> Positive attitude and keeping the team spirit at the highest level.</li>
<li> Discipline staff as necessary in accordance with company guidelines and procedures</li>
<li> Greet with a smile at all times to colleagues or guests.</li>
<li> Meet with customers to discuss custom-made desserts or baked goods for special occasions.</li>
<li> Keep recipes updated within recipe software.</li>
<li> Monitors and approves all staff issues reporting to the Executive Pastry Chef including overtime, change of shifts, staff leave, etc.</li>
<li> Routinely and proactively assess property and culinary equipment and maintenance needs.</li>
<li> Maintaining exemplary cleanliness and adheres to local and state health department requirements.</li>
<li> Understand food cost and labor cost controls. </li>
<li> Communicate and understand the mission of the restaurant.</li>
<li> Maintain a commitment to honesty and integrity.</li>
<li> Ability to accept constructive criticism in order to raise and maintain performance standards.</li>
<li> Other duties will be assigned by the CEO/Owner as they see fit.</li>
</ul>
Qualification 
<ul>
<li> College degree in culinary arts, pastry-making, baking, or relevant field</li>
<li> Proven experience as Pastry Chef, baker or relevant role</li>
<li> Sound understanding of food allergies and foodborne.</li>
<li> Professional appearance with impeccable hygiene </li>
<li> Excellent oral and written communication skills combined with outstanding leadership, interpersonal and conflict resolution skills. </li>
<li> Experience with recipe development. </li>
<li> Excellent basic math skills. </li>
<li> Knowledge of typical commercial kitchen and bakery </li>
<li> In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition. </li>
<li> SERV Safe Food Manager certification, required.</li>
<li> Working knowledge of baking with ingredient limitations (pastries that are gluten free, dairy free, etc.) </li>
<li> Coordination to do classy decorations.</li>
<li> Great attention to detail and creativity</li>
<li> The desire to have fun, smile and have a happy attitude!</li>
</ul>
Supervision
The employee performs work under the supervision of the CEO.

<li>Work with hot, cold, and potentially hazardous equipment</li>
<li>May be required to work in very warm or cold conditions for an extended period of time.</li>
