Who We Are:
We are a small, from-scratch bakery that specializes in sourdough-leavened breads located in Helotes, Texas. We frequently change flavors based on seasonal produce and flavor profiles, and bake plenty of holiday favorites from around the world. We are community-focused, consistent in both our products and how we show up for each other, and cooperate as a team, there is no room for anything but success and joy.
What We’re Looking For:
We are looking for two back of house employees. You will work alongside the owners, Sophie and Justin, learning everything they can teach you about bread baking and more. This is a wonderful opportunity to learn, and there is an almost certain opportunity for growth as the company grows.
The ideal candidates have a positive attitude, take constructive feedback well, work with a sense of purpose, and are eager to learn. There are two positions available; please read through the descriptions thoroughly and decide which you would like to apply for. Both positions are physically demanding and require standing for the entire shift, bending, and lifting up to 50 lbs repeatedly. Both positions require at least some experience in a commercial kitchen. Priority will be given to those with experience baking for commercial purposes.
Both positions will require a one-week trial shift, after which we can decide if it is a good fit for both parties.
Baker’s Apprentice:
You will bake alongside Sophie early in the morning. Your apprenticeship will begin with learning to shape pastries and a large variety of bread products including bagels, challah, pretzels, milk bread. You will decorate pastries and prepare items for sale before open. Eventually, you will learn to manage our ovens and read when an item is properly proofed. Before leaving, we will mix sourdough loaves for the next day. This requires an ability to use a scale to weigh ingredients, and some pretty strong forearms as we hand-mix our sourdough.
This position requires the greatest dedication, as it will affect your personal life. A 3am shift comes early, and you will be expected to come in ready to work on time. Please do not apply if you are not prepared to adjust your lifestyle to ensure you are fully rested and properly fueled for a physically demanding day. That being said, this position also carries the greatest potential for advancement and promotion, so if you are looking for a long-term opportunity…this is it. Experience working with any sort of bread is a huge plus, even if it's just cinnamon rolls. Consistency and being able to juggle multiple things at once is a must.
Your schedule will be:
Tuesdays from 9am until 3pm
(this is our prep day, and requires all hands on deck)
Wednesdays-Saturdays from 3am-9am
Bakery Prep/Assistant:
You will work alongside Sophie and our other prep baker and knock out prep for the next day, eventually working solo with just the other prep baker. You will learn to mix a variety of doughs, from focaccia to pretzels to cookies. You will shape items like pop-tarts and learn to make a variety of fillings and icings. You will learn to shape sourdough loaves, typically ending your day with shaping loaves for the next day before helping the cashiers and dishwasher to clean and close the bakery. Every other Saturday, you will come in for a flex shift, during which you will assist with slicing loaves and answering the phone, begin some prep for the next week, clean out fridges, and take inventory.
This position requires a relentless attention to detail. You must be comfortable using a scale and must be able to multitask while sharing a workspace. We work clean, we work intentionally, we work collaboratively.
Your schedule will be:
Tuesdays through Fridays from 9am until close (typically between 2:30-3pm)
Every other Saturday from 9am until close (sometimes as early as 1pm)
Requirements for both positions:

Reliable and punctual.

Physically able to regularly bend over/squat, lift up to 50lbs regularly, and stand for the entire shift.

Food Handler’s Certification required.

Attention to detail is a must. This is a fast moving bakery with many different things happening at once; being able to stay calm under pressure and aware of what you are doing at all times is vital.

Pay/Benefits:

Pay starts at $12/hr plus your share of 20% of tips based on hours worked. Pay is based on experience and will be reevaluated biannually.

Weekly loaf of sourdough, a daily item from the pastry case, and a 25% employee discount on any additional items you purchase (retail items excluded).
