The Overnight Bake Manager supports Tatte’s efforts to inspire, care for and nurture life, every day, by managing the quality and execution of all pastries, desserts, and bread that are baked by our overnight team. The Overnight Bake Manager is committed to uncompromising quality and craftsmanship in all aspects of our overnight bakes and is responsible for ensuring that all products are prepared to Tatte specifications in time for morning distribution and consistent with relevant safety protocols/regulations.
Responsibilities Include:
- Ensuring consistent and quality products per Tatte procedures and specifications
- Working with Executive Pastry Chef & Head Baker to properly staff the overnight bake team
- Properly onboarding and training all new overnight team members
- Scheduling team members and timely posting team member schedules
- Directing the overnight bake team to efficiently, effectively, and safely execute all overnight bake tasks
- Being responsible for the quality control process in proofing, baking, finishing, picking, and packaging all goods
- Maintaining productive and collaborative relationships with all bakery team members (managers and hourly team members alike)
- Ensuring all overnight team members are following safety, sanitation, and cleanliness policies, protocols, and government regulations
- Being actively involved in ongoing evaluation and development of team members
- Supports the Executive Pastry Chef in all aspects of people management, including but not limited to fostering a warm and inclusive workplace, hiring new team members, maintaining a safe and sanitary workplace, and actively training and developing team members.
- Other duties as assigned
Working Conditions / Essential Functions:
- Must be able to stand for 10 hours per production shift/day
- Able to grasp, reach overhead, push, lift and carry up to 50 pounds
- Must be available to work overnight shifts during the week and weekend, and holidays (as needed)
Position Requirements
- Ability and experience operating bakery manufacturing equipment such as deck ovens, proofers, rack ovens, fryers, etc.
- Excellent communication and time management skills
- Ability to multi-task in a fast-paced, high-volume production bakery
- Positive, can-do attitude
- Ability to direct and manage a team of bakers
Other Preferred Skills
- 3-5 years baking experience preferred
- Prior managerial experience in a high-volume production facility
- AIB or Culinary School certification in Baking
- Serv Safe Certified preferred · Proficiency in Spanish is a plus
