An Oyster Shucker is responsible for cleaning shellfish, rotating stock, as well as rapidly and safely opening shellfish. Key duties include ensuring food safety/sanitation, maintaining inventory, and offering product knowledge to customers in a fast-paced environment

  • Shucking: Expertly and quickly open oysters using a shucking knife, ensuring no shell fragments or damage to the meat.
  • Preparation & Service: Clean, prepare, and arrange oysters on ice-filled platters for service.
  • Sanitation & Safety: Maintain a clean, sanitized, and organized station, adhering strictly to health regulations (HACCP).
  • Inventory & Stocking: Restock oysters, ice, sauces, and tools throughout the shift.
  • Equipment Care: Proper handling and care of shucking knives and protective gear.


Requirements

  • Experience: Prior experience in shucking oysters or high-volume food prep is often preferred.
  • Skills: Strong manual dexterity, attention to detail, and the ability to stand for long periods.
  • Knowledge: Familiarity with seafood safety, HACCP regulations, and different oyster types.
  • Physical: Ability to lift, bend, and work in a fast-paced, sometimes, cold environment.
  • Schedule: Willingness to work nights, weekends, and holidays
