About us
Juniper Meat Company is a meat processing business dedicated to providing high-quality service to hunters everywhere. We primarily process wild game, namely, elk, deer, antelope, moose, and bison. We are looking for a highly-skilled and experienced Lead Meat Breaker/Cutter to join our team and oversee the initial breakdown of carcasses.
Job summary
As the Lead Meat Breaker/Cutter, you will play a critical role in our production line. You will be responsible for the initial breakdown of whole carcasses and sub-primal cuts as they come off the rail. This position requires a high level of skill, speed, and precision to prepare product for our team of trimmers, ensuring maximum yield and consistent quality. You will work closely with management and act as a liaison between your team and supervisors to maintain a smooth and efficient workflow.
Primary duties and responsibilities
- Initial carcass breakdown: Expertly breakdown carcasses into primal and sub-primal cuts to distribute to along the processing line.
- Yield optimization: Use advanced knife skills to maximize yield from every animal and ensure cuts meet company specifications.
- Team leadership: Organize and direct the short-term flow of your production area. Provide guidance and training to the trimming team and ensure daily objectives are met.
- Quality control: Need to be able to read the cut sheet accurately to insure customer receives correct cuts. Work with the management team to ensure all specifications and quality standards are met throughout the breakdown process.
- Safety and sanitation: Maintain a clean, sanitary, and organized work environment.
- Equipment maintenance: Ensure all cutting tools and equipment are properly cleaned, stored, and maintained in a sanitary manner.
- Communication: Maintain clear communication with the trimming team and supervisors regarding production flow, issues, and daily goals.
Qualifications
- Proven experience working as a butcher or meat processor in a production environment.
- Exceptional knife skills and a deep understanding of meat anatomy and cuts.
- Able to organize an efficient work flow of the cut tables.
- Knowledge of proper food handling and safety protocols.
- Ability to work in a fast-paced, physically demanding, and often cold or damp environment.
- Commitment to quality, safety, and teamwork.
- Ability to stand for extended periods and perform repetitive motions.
Physical demands
The role requires frequent standing, walking, lifting, pushing, and pulling heavy product. Candidates must be able to lift up to 50 lbs. independently and more with assistance.
