Sous Chef | Bronx Production Facility
$90,000-$100,000 + Full Benefits | 90+ Year NYC Specialty Food Retailer
Manage shift operations for commissary supplying 6-8 premium retail locations across the tri-state area.
The Role:
- Lead one production shift (30-50 team members)
- Oversee bulk food preparation for retail distribution
- Ensure quality standards for items consumed 24-48 hours after production
- Manage shift scheduling, food safety compliance, and production deadlines
- Train and develop line cooks and prep staff
Requirements:
- 3-5 years commissary, production facility, or large-scale institutional kitchen experience (producing for multiple locations, not a single restaurant)
- Experience managing 20+ person teams
- Understanding of packaging for delayed consumption (not immediate plate service)
- Examples of relevant backgrounds: Commissary operations, production facilities, airline catering, institutional dining (hospitals/universities), multi-unit food production
- Strong food safety knowledge (HACCP, proper storage, labeling)
- Spanish bilingual strongly preferred
NOT a fit if:
- You've only worked in restaurants or hotels (single-location service)
- You haven't managed production for off-site consumption
- You've never supervised 20+ people on a shift
