SUMMARY:
Assures quality food products are prepared and made to specifications with sanitary food handling practices at all times for the respective culinary kitchens. Responsible for cooking all prepared food to the specifications of the kitchen chef and executive chef.
GENERAL PURPOSE:
The purpose of this position is to provide skilled culinary practices involving set procedures and rules, but with frequent problems. Work is performed in a structured environment with rules and procedures, but many variations from the routine.
ESSENTIAL FUNCTIONS:
Maintains and supports a positive, collaborative culture within the organization as a whole, fully embracing the culture and values statements espoused by Hiro & CO.
Establishes and maintains effective working relationships with guests and co-workers.
As needed to accomplish the task in the respective food cooking line.
Arrives daily per published and posted scheduled on respective workdays and ready to work with proper attitude and uniform.
Coordinate with chef or supervisor that respective areas in the kitchen cooking line have designated products for made-to-order cooking.
Coordinate and works under the direction of the Chef/Supervisor and communicates daily.
Responsible for maintaining top-quality cleanliness in all kitchen operations.
Works with Chef/Supervisor to adapt and address any special event preparations as directed by Chef/Supervisor.
Attend kitchen meetings as scheduled.
Ensures that all kitchen facilities and equipment are clean, operational, and maintained. Communicates any repair issues to the Manager/Supervisor.
Assures safe food handling and food preparation.
Works with Chef/Supervisor as it relates to preparation and cooking of any seasonal food items.
Ensure that all daily checklists are fully completed and communicated to Chef/Supervisor staff including opening, mid-shift, and closing responsibilities.
Assures that all products are cooked correctly per specification without deviation before any product is presented to the front of house staff for presentation to guests
Adheres to all policies and procedures of the restaurant per Employee Handbook and posted policies and procedures.
Meets with Chef/Supervisor as needed and performs other duties as requested by Chef/Supervisor or the Owner.
Attends all scheduled shift service lineups and meetings.
Culinary training from the accredited culinary institute – Preferred
MINIMUM QUALIFICATIONS:
Possess great knife skills - Required
Kitchen experience or other closely related experience – strongly preferred.
Fine Dining experience or closely related experience – strongly preferred.
