The Wicked Loon | Wolfeboro, NH
The Wicked Loon is a high-volume upscale waterfront restaurant located on the town docks in Wolfeboro, New Hampshire, at the heart of one of New England's most vibrant lake communities.
As we head into our fourth summer as a growing hospitality group, we are looking for an experienced Sous Chef to work directly under our Executive Chef and help lead back-of-house operations.
This is a seasonal Sous Chef role running from April through October, with the potential to become a permanent year-round position for the right person.
Most importantly, you will help lead the kitchen into service, through service, and out of service - setting the tone, managing the pace, supporting the line, and making sure standards hold from prep through the final plate of the night.
What makes this role unique is the nature of the operation. We serve both lunch and dinner at a high level, and doing both well takes strong prep, disciplined execution, real attention to detail, and steady kitchen leadership.
This is a role for someone who cares about the details: the food, the line, the prep, the team, the cleanliness of the kitchen, and every plate that leaves the window.
Who We're Looking For
We are looking for a proven kitchen leader with strong culinary experience, high standards, and a real sense of ownership.
The right candidate can hold people accountable, train and develop a team, and lead with professionalism, urgency, and integrity.
This role requires someone who can work clean, think ahead, communicate clearly, and keep the kitchen organized and focused under pressure.
Relationships matter here, but this is not a role for someone more interested in being liked than respected.
What You'll Be Doing
You will work directly with the Executive Chef to help lead daily back-of-house operations and support the performance and development of the team.
Responsibilities include:

opening the kitchen and running shifts

leading prep and line execution for both lunch and dinner service

helping manage scheduling and daily kitchen organization

helping hire, train, and develop kitchen staff

supporting seasonal team members and integrating new hires into the operation

maintaining standards for food quality, consistency, cleanliness, and execution

managing ticket flow, communication, and pace during service

supporting ordering, prep systems, and station readiness

overseeing closing procedures and end-of-day kitchen standards

Qualifications

previous kitchen leadership experience required

strong line and prep experience required

high-volume and/or upscale dining experience preferred

proven ability to train, coach, and develop a kitchen team

strong organizational and communication skills

ability to maintain standards and composure in a fast-paced environment

availability for the full seasonal run from April through October
Compensation
$1,000–$1,200 per week, depending on experience and leadership background.
Housing may be available for the right candidate through a shared apartment arrangement with a private bedroom. Housing is separate from compensation.
