About Us:Wooden Pearl is a modern seafood and steak restaurant located inside the Anaheim Packing House. We focus on high-quality ingredients, elevated comfort food, and an exceptional dining experience. Our curated menu blends coastal cuisine with refined execution—featuring oysters, surf & turf dishes, and a raw bar program. We’re now expanding our offerings to include a boutique sushi menu and are looking for a talented Sushi Chef who can also support prep for our core kitchen operations.
Position Overview:We’re hiring a skilled Sushi Chef who is passionate about quality, creativity, and teamwork. This dual-role position will also involve back-of-house prep support, including shucking oysters, portioning seafood and proteins, and prepping vegetables, sauces, and garnishes for our full menu. You’ll be an integral part of a small but dynamic culinary team.
Key Responsibilities:
- Prepare and execute a concise, high-quality sushi menu with daily mise en place
- Maintain cleanliness and organization of sushi station and raw bar area
- Shuck oysters and ensure proper handling of all shellfish and raw items
- Assist with general prep for surf & turf dishes, including proteins, vegetables, and sauces
- Uphold health and safety standards, including FIFO, labeling, and sanitation procedures
- Collaborate with kitchen team and management on specials and seasonal offerings
- Maintain product integrity and reduce waste through efficient prep
Requirements:
- 2+ years experience in sushi preparation and plating
- Strong knife skills and knowledge of raw fish handling and food safety
- Comfort working in a hybrid role that includes both sushi and general kitchen prep
- Able to work efficiently in a fast-paced, team-oriented environment
- Strong communication and organizational skills
- Flexible availability, especially evenings and weekends
