Job Summary:
We are looking for a hands-on, highly skilled Sous Chef to join our from-scratch, fine dining kitchen. This is not just a management role — it is a working chef position. The Sous Chef must be as good, if not better, than any line cook in the kitchen, able to lead by example while working stations daily. The ideal candidate thrives in a fast-paced environment, has exceptional attention to detail, and is passionate about delivering refined, consistent, and elevated dining experiences.

Responsibilities:

  • Work the line daily, mastering every station and stepping in wherever needed.
  • Lead by example, demonstrating exceptional cooking skills, professionalism, and urgency.
  • Maintain uncompromising attention to detail in flavor, plating, and consistency.
  • Train, mentor, and motivate kitchen staff while holding them accountable to fine dining standards.
  • Collaborate with the Executive Chef on menu development, prep systems, and execution of specials.
  • Ensure mise en place is complete and stations are fully prepared for service.
  • Oversee inventory, ordering, and rotation of ingredients to minimize waste and control costs.
  • Maintain the highest standards of sanitation, safety, and food handling.
  • Act as second-in-command to the Executive Chef, taking charge of the kitchen in their absence.


Qualifications:

  • Minimum 3–5 years of culinary experience, with significant time spent in fine dining or upscale, from-scratch kitchens.
  • Proven ability to work every line station with skill, speed, and consistency.
  • Strong leadership skills with the ability to earn respect by being the hardest worker in the kitchen.
  • Deep knowledge of advanced cooking techniques, seafood, meats, sauces, and seasonal ingredients.
  • Strong organizational skills, attention to detail, and ability to perform under pressure.
  • Food safety certification (ServSafe or equivalent) preferred.
  • Flexible availability, including nights, weekends, and holidays.
  • A genuine passion for the craft of cooking, mentoring others, and maintaining excellence at all times.
