Summary
Aspasia Coffee and Bake Shop is looking for an Executive Pastry Chef responsible for crafting an assortment of delicious gluten-free baked items including pastries, cookies, cakes, breads, and other confections. This person should be passionate about baking and be inspired to crease masterpieces that go beyond our customers expectations.
To be successful in this role you must be well-versed in culinary arts and adhere to strict standards of hygiene and cleanliness.

Essential Duties and Responsibilities
- Supervise preparation, quality and quantity of all baked items.
- Understand how to work with laminated dough, chocolate, building and icing cakes, wedding cakes and all additional aspects of a bakery.
- Responsible for the day-to-day Pastry operations which includes controlling quality and quantity of produced items, menu planning, hygiene standard, communicating and training of staff.
- Responsible for ensuring every employee is working effectively and efficiently improving employee morale and employee relations.
- Communicate new products and information to the team effectively and efficiently.
- Leading and managing the quality/quantity of items produced by the Pastry department, coordinating the production as it relates to the Bake Shop and Special Event functions.
- Establish, maintain, and control food waste.
- Oversee the monitoring of weekly sales and adjusts prep production levels ensuring all food products are ordered to par levels and can make adjustments according to business volumes.
- Checks employee's work areas, clothing and appearance, and safe working practice.
- Hold meetings for upcoming functions.
- Create displays, showpieces, and seasonal attractions.
- Ensure product consistency.
- Assist in developing new recipes.
- Inspect kitchen equipment for cleanliness, hygiene, and monitors sanitation policies to abide by all state food safety and sanitation laws.
- Recruiting, selection and on-boarding of sous chefs and pastry chefs.
- Implements & coordinates the culinary function.
- Positive attitude and keeping the team spirit at the highest level.
- Discipline staff as necessary in accordance with company guidelines and procedures
- Greet with a smile at all times to colleagues or guests.
- Meet with customers to discuss custom-made desserts or baked goods for special occasions.
- Keep recipes updated within recipe software.
- Monitors and approves all staff issues reporting to the Executive Pastry Chef including overtime, change of shifts, staff leave, etc.
- Routinely and proactively assess property and culinary equipment and maintenance needs.
- Maintaining exemplary cleanliness and adheres to local and state health department requirements.
- Understand food cost and labor cost controls.
- Communicate and understand the mission of the restaurant.
- Maintain a commitment to honesty and integrity.
- Ability to accept constructive criticism in order to raise and maintain performance standards.
- Other duties will be assigned by the CEO/Owner as they see fit.
Qualification
- College degree in culinary arts, pastry-making, baking, or relevant field
- Proven experience as Pastry Chef, baker or relevant role
- Sound understanding of food allergies and foodborne.
- Professional appearance with impeccable hygiene
- Excellent oral and written communication skills combined with outstanding leadership, interpersonal and conflict resolution skills.
- Experience with recipe development.
- Excellent basic math skills.
- Knowledge of typical commercial kitchen and bakery
- In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition.
- SERV Safe Food Manager certification, required.
- Working knowledge of baking with ingredient limitations (pastries that are gluten free, dairy free, etc.)
- Coordination to do classy decorations.
- Great attention to detail and creativity

Supervision
The employee performs work under the supervision of the CEO.
Work environment and Physical Demands
- Work with hot, cold, and potentially hazardous equipment
- May be required to work in very warm or cold conditions for an extended period of time.
- While performing the duties of this job, the employee is regularly required to stand; use hands to finger, handle, or feel; reach with hands and arms; talk or hear and taste or smell.
- The employee may frequently lift and/or move up to 50 pounds.
