The Sushi Cook is responsible for preparing and presenting high-quality sushi dishes, including rolls, sashimi, and nigiri, with precision and artistry. This role requires deep knowledge of sushi preparation techniques, food safety standards, and a commitment to excellence in both taste and presentation.
Requirements:
- Exemplify the Tommy’s Tavern + Tap Culture| Dedicate oneself to delivering GREAT guest service, consistently going above and beyond for both guests and team members.
- Prepare sushi menu items including rolls, nigiri, sashimi, and specialty dishes according to established recipes and presentation standards.
- Ensure freshness and quality of all sushi ingredients, including fish, vegetables, and rice.
- Maintain proper storage and handling of raw fish and other perishables.
- Monitor and maintain sushi station cleanliness and organization.
- Follow portion control guidelines and minimize waste.
- Conduct regular inventory checks and communicate shortages to the Assistant Kitchen Manager.
- Maintain a clean and sanitary work environment in compliance with health and safety regulations.
- Collaborate with kitchen and front-of-house staff to ensure timely and accurate order fulfillment.
- Assist in training new sushi staff members.
- Stay current with sushi trends and techniques to enhance menu offerings.
KNOWLEDGE, SKILLS AND ABILITIES REQUIRED:
- Prior experience as a sushi cook or in a sushi-focused kitchen environment.
- Proficiency in sushi preparation techniques including knife skills, rice preparation, and fish handling.
- Strong attention to detail and artistic presentation.
- Knowledge of food safety standards, especially regarding raw fish.
- Ability to work in a fast-paced, high-volume restaurant setting.
- Familiarity with sushi tools and equipment (e.g., sushi knives, bamboo mats).
- Excellent communication and teamwork skills.
- Ability to stand for extended periods and lift heavy objects as needed.
