  • Ensures compliance with the Kalispel Tribe of Indians- Internal Controls, and Kalispel Casino Policies and Procedures.
  • Responsible for development and implementation of all menus for the Kalispel Casino
  • Monitors daily production of food at Kalispel Casino.
  • Responsible for kitchen labor fore casting and scheduling. Makes adjustment as needed to meet budgeted percentages.
  • Schedules according to business levels.
  • Test new products and recipes as trends and business levels dictate.
  • Responsible for all food requisitions, ensuring quality, and menu specifications through use of standard operating procedures.
  • Review food and labor costs of the entire food operation with Casino Operations Manager
  • Continually review kitchen operations for improvements in the food production area.
  • Observes workers engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking garnishing and sizes of portions are as prescribed.
  • Gives instructions to cooking personnel in fine points of cooking, as well as providing training.
  • Follows all food safety and sanitation guidelines set for by the FDA to ensure HACCP.
  • Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
  • Attends regularly scheduled meetings and seminars as necessary.
  • Ensure control/protection of company assets.
  • Responsible for maintaining a good attendance record.
  • May be required to be a panelist for the Internal Review Hearings.

Education, Experience & Other Requirements

  • High school diploma or GED
  • Culinary Arts/Associate’s degree (A.A.) or equivalent from two-year College or technical school preferred.
  • Ten years related experience and/or training; or equivalent combination of education and experience.
  • Five years supervisory experience preferred. Sous chef level or higher.
  • Diverse cooking and high-volume experience necessary.
  • Direct experience in an organizational development role strongly preferred.
  • Ability to obtain and maintain a Tribal Work Permit.
  • Valid Food Handlers Permit
  • Hepatitis A and B vaccination preferred
  • Valid ServSafe Certificate. Ability to obtain 6 months after hire
