Pastry Chef
Summary Supervises and coordinates activities of Cooks engaged in preparation of desserts, pastries, confections, and ice cream by performing the following duties.
Essential Duties and Responsibilities include the following. Other duties may be assigned.
- Plans production for pastry department, according to menu or special requirements.
- Supplies recipes for, and suggests methods and procedures to pastry workers.
- Fashions table and pastry decorations, such as statuaries and ornaments, from sugar paste and icings.
- Produces and decorates wedding cakes.
- Ensures that high standards of sanitation and cleanliness are maintained.
- Establish controls to minimize food and supply waste and theft.
- Requisitions supplies and equipment.
- Maintains production records.
- Participates in preparing desserts.
Supervisory Responsibilities: Manages/supervise a total of four employees in the Pastry Department. Is responsible for the overall direction, coordination, and evaluation of these units. Also directly supervises two non-supervisory employees. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include training employees; planning, assigning, and directing work; appraising performance; addressing complaints and resolving problems.

Education and/or Experience: Bachelor's degree (B. A.) from four-year college or university; or one to two years related experience and/or training; or equivalent combination of education and experience.
Language Skills: Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.
Mathematical Skills: Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.
Reasoning Ability: Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
Computer Skills: To perform this job successfully, an individual should have knowledge of Point of Service systems.
