Position Overview:
We are searching for a visionary Executive Chef to oversee all kitchen operations, create unforgettable menus that marry the robust flavors of a classic steakhouse with the delicate artistry of fresh seafood, and maintain our reputation as a top-tier dining establishment. The ideal candidate is a passionate leader with expertise in high-end cuisine, a mastery of steak preparation, proficiency in seafood preparation, and a dedication to sourcing the finest ingredients.
Key Responsibilities:
- Develop and execute seasonal menus showcasing premium steaks, fresh seafood (e.g., oysters, lobster, and sustainably sourced fish), and complementary dishes that align with Raleighs sophisticated dining scene.
- Manage daily kitchen operations, ensuring consistent food quality, presentation, and adherence to our elevated standards for both steak and seafood offerings.
- Lead, train, and inspire a talented team of cooks and kitchen staff, fostering a culture of excellence and collaboration.
- Build relationships with premium suppliers to secure the highest-quality ingredients, including USDA Prime and Wagyu beef, as well as fresh, sustainable seafood.
- Control food costs, reduce waste, and maintain profitability while upholding exceptional quality across steak and seafood menus.
- Ensure compliance with health, safety, and sanitation regulations, particularly for seafood handling and storage.
- Partner with front-of-house staff to deliver a seamless and memorable guest experience, highlighting the interplay of steak and seafood.
- Stay informed on culinary trends, incorporating innovative techniques to keep our steak and seafood offerings fresh and competitive in Raleighs dining market.
Qualifications:
- Minimum of 5 years experience as an Executive Chef or Chef de Cuisine in a high-end steakhouse, fine-dining restaurant, or seafood-focused establishment.
- Extensive knowledge of steak preparation, butchery, and expertise with premium beef grades (e.g., USDA Prime, Wagyu), combined with proficiency in seafood preparation and sourcing.
- Proven leadership skills with experience building and managing high-performing kitchen teams.
- Creative menu development skills with a focus on flavor, presentation, and seasonal ingredients, balancing steakhouse classics with fresh seafood dishes.
- Familiarity with wine and spirit pairings to enhance both steak and seafood offerings is a plus.
- Ability to excel in a fast-paced environment while maintaining precision and quality.
- Culinary degree or equivalent training preferred but not required.
- Strong budgeting and inventory management skills to optimize costs for both meat and seafood.
