Supervises and coordinates activities of bulk product production. Preparing and apportioning foods, and utilizing food surpluses and leftovers.

  • Follow company standard operating procedures and policies.
  • Supervise food prep and batch cooking
  • Proper knife skills and handling
  • Ensure correct recipes are being followed.
  • Train kitchen staff on prep work, recipes and procedures
  • Store food products in compliance with safety practices (e.g. in refrigerators)
  • Follow all food rotation standards i.e. FIFO
  • Maintain organized work environment
  • Maintain sanitation and safety standards in the kitchen area
  • Full understanding of production equipment i.e. tilt skillet, steam jacket, combi ovens, blenders, food processors and gas stoves.
  • Monitor par levels for daily production and understanding how to adjust to business volume.
  • Understand HACCAP procedures i.e. rapid cool down and temperature danger zone
  • Operates and maintains all department equipment and reports malfunctions
  • Checks the quality of raw and cooked food products to ensure that standards are met.

Skills

  • Leads shifts while personally preparing food items and executing requests based on required specifications.
  • Proven work experience as a Kitchen Manager or Lead Cook
  • Knowledge of a wide range of recipes and standard kitchen procedures
  • Familiarity with kitchen sanitation and safety regulations
  • Excellent organizational skills
  • Conflict management abilities and critical thinker
  • Ability to manage a team in a fast-paced work environment
  • Flexibility to work during evenings and weekends

Job Requirements:

  • High School Diploma/GED a plus but not required
  • Previous experience as lead cook or supervisor
