Position Summary/General Description:
The Culinary Operations Steward is part of the Food and Beverage Management Team at Route 66 Hotel and Casino and reports directly to the Culinary Operations Manager. The Culinary Operations Steward is responsible for assisting the Culinary Operations Manager with the management of back of the house operations, excluding the actual food production. The Culinary Operations Steward oversees the receiving, storage, and rotation of products, all aspects of cleaning, safety and sanitation, and equipment maintenance of all kitchen operations. This position is responsible for supervision and development of staff, maintaining health department standards and adhering to the department's budgetary guidelines. Ensures all Laguna Development Corporation specifications and standards are satisfied.
Essential Duties & Responsibilities:
- Responsible for the staffing, training, evaluating and coordination of all utility employees.
- Directly supervises receiving-stocking, dish-room, and cleaning activities.
- Maintain excellent Back-of-the-House sanitation and safety conditions at all times.
- Must possess excellent time management, organizational skills and attention to detail with emphasis on meeting department’s standards.
- Knowledge of all State Health Department regulations and ensures all conditions and standards are met.
- Provide all associates with proper training and counseling as needed in accordance with Laguna Development Corporation policies and procedures
- Must possess excellent communication and organizational skills. Maintain a consistent and regular attendance record.
- Ability to promote and participate in a strong team effort.
- Ability to maintain organization, meet deadlines and possess integrity.
- Ability to read and interpret documents such as safety rules, operating and maintenance instructions and procedure manuals.
- Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions.
- Must be able to work irregular hours and extended shifts including late nights, early mornings, weekends and holidays.
- Excellent service etiquette.
- Must be able to add, subtract, multiply and divide in all units of measure, using whole numbers, percentages, common fractions, and decimals.
- Must be able to apply commonsense understanding to a variety of situations, in order to collect data, analyze facts, and determine appropriate response.
- Must consistently perform the job successfully, each day satisfactorily.
- Meet departmental productivity standards.
- Candidate must be willing to work event-based hours that include evenings and weekends.
- Must be poised to handle a fast paced environment with multiple tasks under time constraint. Must be able to handle a heavy business volume in a timely manner.
- Perform additional duties and responsibilities as necessary or assigned.
Education & Experience
- High School Diploma or equivalency, preferred.
- Three (3) years of prior stewarding or back of house restaurant experience in a high volume environment required, such as a hotel, casino, multiple venue or resort setting; required.
- Three (3) year supervisory experience required.
- Fully competent in operating and training on all Food and Beverage equipment.
- Ability to work independently with minimal supervision.
- Ability to speak effectively to team members and guests of the organization.
Licensing & Certification:
- Successful completion of Serve Safe certification within 90-day introductory period.
Essential Physical Requirements:
- The job requires the ability to balance/climb, bending over, crawling, kneeling, crouching/stooping, driving, hearing, reaching overhead, sitting, standing, talking, turning/twisting and walking. 51-100%of the time.
- The job requires the ability to push/pull, 1 to 50+ lbs. and carrying/lifting 1to 50+ lbs. 51-100% of the time.
Work Environment (inside/outside):
- The job is performed primarily indoors with exposure to loud noises, confined areas and fumes (e.g., cigarette smoke).
- The job is performed outdoors with occasional exposure to hot/cold temperatures.
