Job Summary

We are seeking an experienced and detail-oriented Food & Beverage Manager to lead and manage our F&B tram in both of our restaurants and bars. This leadership role is responsible for ensuring guest satisfaction through quality service and employee development while balancing the costs of the department. Primary Duties and Essential Job Functions

  • Interview and select qualified candidates for the Food & Beverage team at Happy Valley Casino.
  • Effectively manage all F&B Shift Supervisors, Restaurant Servers, Bartenders, F&B Host/Cashiers, Cocktail Servers and Porters through daily operations.
  • Collaborate with Executive Chef to maintain an efficient and holistically collaborative Food & Beverage department that partners and supplements all other departments effectively.
  • Collaborate with F&B Supervisors, Executive Chef & Sous chefs on the synchronization & pairing of all Kitchen & Bar menu items.
  • Monitors all Food & Beverage outlets (Restaurant, Food Court, Center bar, Cocktail Service) and evaluates performance of subordinates, ensuring adherence to casino compliance, Pennsylvania Gaming Control Board and Liquor Control Board policies and procedures.
  • Coordinate successful food & beverage service for casino events, VIP guests, and special promotions.
  • Ensure efficient inventory management, ordering, and cost control procedures.
  • Collaborate with chefs, F&B supervisors, and vendors on development & maintenance of all food & beverage menus and menu standards.
  • Develop and manage departmental budgets, profit & loss statements, labor cost controls, and revenue forecasts.
  • Analyze sales trends, guest preferences, and competitor offerings to optimize profitability and market competitiveness.
  • Implement strategies to increase average check size, upselling, and repeat patronage.
  • Drive guest satisfaction, by maintaining high standards of food, service, and ambiance.
  • Address and resolve guest complaints or operational issues quickly and effectively.
  • Foster a welcoming and inclusive environment for all guests.
  • Maintain cleanliness, sanitation, and food safety standards across all venues.
  • Proven ability to manage large teams in a dynamic, high-pressure environment.
  • Ability to work nights, weekends and holidays
  • Collaborates with food & beverage shift supervisors to develop and maintain exemplary and exceptional guest service.
  • Works with Executive Chef on collaboration with Purchasing and Warehousing to assure all food items are properly ordered to specifications and par levels, received as purchased from purchase order, stored FIFO, priced and dated, requisitioned and received and stored in the production areas in accordance with policies and procedures.
  • Conduct efficient and thorough period end food & consumables inventories ensuring that all pricing, unit costs and extensions are accurate.
  • Assign, in detail, specific duties to all employees for efficient operation of the department.
  • Maintains and monitors High-Cost Inventory items while establishing par levels for all workstations.
  • Schedules food & beverage team (Front of House) so the proper coverage is maintained while monitoring daily timecards ensuring payroll costs are kept in line.
  • Maintain and improve the overall food & beverage operation. Must be a liaison of food & beverage and all other departments.
  • Order and maintain accurate and cost-efficient liquor & beer inventory for the property.
  • Ensures that all staff maintain the standards set forth by the Local and State Health Department Codes.
  • Directly communicates with food & beverage staff on daily needs, requirements and expectations. Collaborate with Executive Chef to cultivate and maintain a positive working culture for Food & Beverage department

Minimum Qualifications

  • High School Diploma or Equivalent. Bachelor's in hospitality preferred.
  • RAMP/Serve Safe & TIPS Certifications highly desired.
  • Minimum of 5 Years Food & Beverage Leadership Experience.
  • Experience with creating Bar/Cocktail menu's required.
  • Strong computer skills in Microsoft Office as well as different POS systems.
  • Must possess thorough working knowledge of front and back of house operations.
  • Ability to work a flexible schedule including including nights, weekends and holidays.
  • Must be able to be approved and maintain licensure by Penssylvania Gaming Control Board.
