Executive Chef
Client seeks a passionate and experienced Chef to lead the kitchen. The Chef will bring the vibrant flavors and atmosphere of an authentic Aussie brewpub. The ideal candidate should have a deep appreciation for craft beer and understand how to pair brews with food. A creative culinary talent with a knack for classic Aussie fair and localized cuisine.
About Client:
Client was conceived by two recovering accountants turned hospitality entrepreneurs, aimed at showcasing Melbournian hospitality. Client is focused on a deliberate and comfortable environment serving quality beer, and quality food with friendly, professional service in a relaxed atmosphere. With the addition of a very deliberate, high-quality, and beer-focused menu, we are aiming to bring something truly unique to the South Florida beer market.
The beer menu is fresh and will change regularly showcasing a global offering of beer styles, of course including some great Southern Hemisphere style beers.
Responsibilities:
· Menu Development & Innovation:
· Create and refine a menu featuring classic Aussie pub favorites (e.g., Parmigiana, Meat Pies, Fish & Chips, Burgers, Steaks, etc.) along with modern twists and seasonal specials.
· Develop creative dishes specifically designed to pair well with the brewery's diverse beer styles, considering complementary flavors and contrasting elements.
· Keep up with current food trends while maintaining a focus on quality and authenticity.
Kitchen Management & Operations:
· Oversee all aspects of kitchen operations, including food preparation, cooking, plating, and presentation, ensuring consistent quality and adherence to recipes.
· Manage kitchen inventory, including ordering ingredients and supplies, minimizing waste, and conducting regular inventory checks.
· Maintain strict compliance with all health, safety, and hygiene regulations, including HACCP principles for cleaning and sanitizing.
· Schedule and supervise kitchen staff, providing training, coaching, and performance feedback to foster a positive and productive work environment.
· Collaborate with the brewery team to coordinate food offerings with beer releases, events, and promotions.
· Monitor kitchen expenses and assist in budget control to ensure profitability.
Customer & Team Focus:
· Ensure an exceptional culinary experience for all guests, attending to special dietary needs and preferences.
· Foster a collaborative and supportive team environment, leading by example and promoting a positive work culture.
Qualifications and Experience:
· Proven experience (minimum 3-5 years) as a Chef or Head Chef in a high-volume pub, restaurant, or brewery setting.
· Extensive knowledge of classic and contemporary Aussie pub food.
· Passion for craft beer and a strong understanding of beer and food pairing principles.
· Exceptional culinary skills, including food preparation, cooking techniques, and presentation.
· Demonstrated leadership abilities, with experience managing and mentoring a kitchen team.
· Strong knowledge of food safety regulations and sanitation best practices.
· Excellent communication, organizational, and problem-solving skills.
· Ability to thrive in a fast-paced environment and handle multiple tasks efficiently.
· Flexibility to work evenings, weekends, and holidays as required.
Nice-to-haves:
· Culinary degree or certification.
· Experience with kitchen budgeting and cost control.
· Basic understanding of the brewing process and different beer styles.
Note: A successful candidate may be invited for a cooking demonstration or menu development exercise as part of the interview process.
