JOB TITLE – Executive Sous Chef

REPORTS TO – Executive Chef – The Roof
SUMMARY
The Executive Sous Chef at The Roof is a senior culinary leader responsible for supporting the Executive Chef in the day-to-day execution of fine dining service. This role plays a key part in maintaining the elevated culinary standards of the restaurant, overseeing kitchen operations, mentoring team members, and ensuring consistent quality, presentation, and guest satisfaction. The Sous Chef will also contribute to planning, service pacing, and operational efficiency in a high-profile, refined dining environment.
JOB ENVIRONMENT
Works indoors in a high-pressure, fine dining kitchen setting with strict attention to detail, presentation, and pacing. Must be comfortable working long shifts, including evenings, weekends, and holidays. Frequently interacts with premium ingredients, precision equipment, and a team of culinary professionals in a fast-paced environment.
SKILLS, EDUCATION AND QUALIFICATIONS
· 4+ years of extensive culinary experience in fine dining or upscale restaurant kitchens
· Deep understanding of fine dining standards, plating techniques, and service coordination
· Skilled in managing kitchen operations with consistency and precision
· Excellent time management, communication, and organizational skills
· Ability to remain composed and focused during high-pressure service periods
· Familiarity with inventory control, cost management, and waste reduction strategies
· Culinary degree or equivalent training preferred
· Ability to lift up to 70 pounds and stand for extended periods
· Adherence to company grooming, hygiene, and uniform standards
ESSENTIAL FUNCTIONS
· Supports the Executive Chef in all areas of kitchen operations for The Roof
· Oversees prep and service execution, ensuring consistency, portion control, and plating quality
· Assists with leading the BOH team, conducting training, performance reviews, and daily pre-shift guidance
· Maintains kitchen cleanliness and sanitation in compliance with health and safety standards
· Monitors food quality and readiness during service to ensure timely and accurate ticket execution
· Coordinates with front-of-house management to ensure seamless communication and guest satisfaction
· Assists in managing inventory, placing orders, and reducing waste
· Performs other duties as assigned by management
OTHER JOB REQUIREMENTS
· May be required to work outside of regular business hours, including weekends, evenings, and holidays
· Must be available to support private dining events, chef’s table experiences, and specialty offerings
COMPENSATION/BENEFITS:
$80,000 - $95,000. This range is inclusive of multiple job levels. Salary to be determined by multiple factors including but not limited to evaluation of the education, experience, knowledge, skills, and abilities of the applicant along with internal equity and alignment with market data.
