Emporium Pies is looking for a talented, organized, and hospitality-minded Head Baker / Pastry Chef to lead our bakery production program.
We are looking for someone who loves scratch baking, understands consistency, leads with care, and can help protect the quality and soul of the Emporium Pies brand while supporting the company through its next chapter.
This is a hands-on leadership role for someone who can manage daily pie production, train a team, maintain standards, and help create a warm, generous, and thoughtful bakery culture.
About the Role
The Head Baker / Pastry Chef will oversee daily production of pies, crusts, fillings, toppings, whipped creams, garnishes, and finished products. This person will be responsible for consistency, quality control, production flow, training, ordering, inventory, sanitation, and seasonal menu development.
We need someone who can work clean, stay organized, lead a team, and make sure every pie that leaves the bakery meets Emporium Pies standards.
Responsibilities
Lead daily bakery and pastry production.
Oversee production of pie doughs, fillings, toppings, creams, custards, meringues, fruit fillings, garnishes, and finished pies.
Maintain consistency in flavor, texture, appearance, portioning, and presentation.
Create and manage production schedules, prep lists, par levels, and station organization.
Train, coach, and develop bakery team members.
Maintain recipe standards, systems, and quality-control procedures.
Manage inventory, ordering, waste reduction, and food cost awareness.
Ensure proper sanitation, cleanliness, food safety, labeling, storage, and health department standards.
Collaborate with leadership on seasonal pies, holiday menus, limited-time offerings, and product improvements.
Support company standards across multiple locations as the brand grows and evolves.
Lead by example with professionalism, kindness, urgency, and accountability.
Ideal Candidate
- Has strong pastry, baking, or high-volume dessert production experience.
- Understands pie dough, custards, creams, fruit fillings, meringues, whipped toppings, and bakery production flow.
- Has leadership experience in a bakery, restaurant, hotel, commissary, catering, or pastry kitchen.
- Can balance creativity with consistency.
- Is organized, clean, calm under pressure, and detail-oriented.
- Can train people patiently and hold standards without ego.
- Understands that Emporium Pies is about more than dessert — it is about hospitality, warmth, generosity, and creating a memorable guest experience.
- Requirements
- 3–5+ years of pastry, bakery, or dessert production experience preferred.
- Leadership or supervisory experience preferred.
- High-volume production experience strongly preferred.
- Strong understanding of scratch baking and production systems.
- Ability to work early mornings, weekends, holidays, and peak seasonal periods.
- Food Handler or Food Manager Certification preferred.
- Must be dependable, organized, clean, and passionate about quality.
