JOB DESCRIPTION
A Line Cook prepares and cooks all menu items to order at Fuzzy's Taco Shop, following signature recipes and quality standards. Line Cooks are responsible for maintaining food quality and safety standards during service, keeping the line clean and organized, and ensuring all proteins reach proper internal temperatures. Line Cooks also communicate with the Prep Cook to maintain sufficient ingredient levels throughout service.
REPORTS TO • Owners/Operating Partners, General Manager, other members of Management Team
BASIC JOB TASKS
● Cook all menu items to order according to Fuzzy's Taco Shop recipes and quality standards
● Verify all proteins reach proper internal temperatures using a calibrated thermometer before placing on steam table
● Maintain hot holding temperatures at 135°ree;F or above at all times; check steam table every 2 hours and document on production log
● Set up and maintain steam table with proper water levels and temperatures prior to and throughout service
● Monitor and restock line items from the prep cooler throughout service; communicate with Prep Cook regarding inventory needs
● Keep grill, fryer, ovens and all cooking equipment clean and operational throughout the shift
● Communicate ticket times and any delays to EXPO and management immediately
● Inspect all food for proper presentation and quality before plating or calling to EXPO
● Properly store, label, date and rotate all food items when pulling from and returning to cooler
● Never use the steam table to reheat food — always use stovetop, microwave or oven; reheat to 165°ree;F
● Assist with kitchen cleaning and sanitation duties including grill scraping, fryer maintenance and line sanitizing
● Complete opening, ongoing and closing duties as assigned and documented on station checklist

EDUCATION AND/OR EXPERIENCE No prior experience or training required.
LANGUAGE SKILLS Ability to read and comprehend instructions, correspondence and memos. Ability to write simple correspondence. Ability to read and speak English to understand guest checks, instructions, warning and safety labels and communicate with others. MATHEMATICAL SKILLS Ability to add, subtract, multiply and divide in all units of measure using whole numbers, common fractions, and decimals.
REASONING ABILITY Ability to apply common sense understanding to carry out instructions furnished in written, oral or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
OTHER SKILLS AND ABILITIES Must hold a current Food Handler's Certification as required by local health authority. Successfully completed Fuzzy's Taco Shop training course work as assigned.
PHYSICAL DEMANDS The physical demands described here are representative of those that must be met by a Team Member to successfully perform the essential functions of this job. The Team Member regularly is required to stand for extended periods, walk and talk or hear. The Team Member frequently is required to use hands to handle objects, tools or controls, and will be exposed to high heat from cooking equipment. The Team Member occasionally is required to stoop, kneel, crouch or crawl. The Team Member occasionally must lift and/or move up to 50 pounds.
