Dietary Kitchen Manager
Description of the role: Neulife Rehab is seeking an experienced and dedicated Dietary Kitchen Manager to join our team. This role will oversee all aspects of food service operations, ensuring that high standards of food quality, safety, and nutrition are met. The manager will supervise a team, maintain inventory, order supplies, and collaborate with nutritionists to provide healthy, balanced meals for our clients, their families, and staff. This is an essential role in maintaining a safe, efficient, and pleasant kitchen and dining environment.
Key Responsibilities:

Employee Management:

Schedule and supervise kitchen staff.

Assist in the hiring and training of new kitchen personnel.

Handle employee performance, including potential disciplinary actions and terminations.

Enforce food safety regulations within the kitchen and dining areas.

Inventory and Ordering:
-
Keep track of food inventory and order supplies as needed.
-
Manage special diet inventory requirements and ensure an adequate supply of ingredients for various dietary needs.

Coordinate food deliveries and maintain stock rotation to ensure freshness and minimize waste.

Food Production Supervision:

Oversee the production and distribution of food for clients, staff, and families.

Monitor the preparation of meals to ensure consistency and high quality.

Prepare recipes and production orders for kitchen staff.

Nutrition & Menu Preparation:

Plan and prepare nutritious and balanced meals for all clients, including special dietary menus (e.g., low-sodium, low-fat).

Collaborate with dietitians and nutritionists to ensure all meals meet dietary guidelines.

Adapt menus as necessary, ensuring the facility's rotating diet plan is maintained.

Budgeting & Payroll:

Assist with food service budgeting and tracking expenses.

Ensure efficient use of resources while maintaining meal quality and dietary needs.

Handle payroll administration for kitchen staff, ensuring accurate records and timely processing.

General Kitchen Duties:

Prepare and cook meals for clients, client families, and facility staff.
-
Clean and maintain kitchen equipment, work areas, and dining areas to meet sanitation standards.

Inspect food preparation areas to ensure adherence to food safety and hygiene protocols.

Food Handling & Preparation:
-
Regulate temperatures of cooking equipment (ovens, grills, broilers) to ensure food is cooked safely.

Ensure food is stored at the correct temperatures.

Prepare food items by cutting, peeling, and washing fruits and vegetables as needed.

Test and taste food to ensure it is properly cooked and meets quality standards.

Additional Responsibilities:

Wash dishes, glassware, and utensils as needed.
-
Stay up to date with daily logs and other documentation.

Qualifications:
-
Proven experience as a Kitchen Manager or in a supervisory food service role, preferably in a healthcare or rehabilitation setting.

Knowledge of food safety regulations and best practices.
-
Ability to prepare and cook food for special dietary needs.
-
Strong leadership and team management skills.
-
Excellent communication and organizational skills.
-
Experience with budgeting and payroll is a plus.
-
Ability to work in a fast-paced, team-oriented environment.
