Summary:

A prestigious resort and casino in California's beautiful wine country is in need of a strategic, creative, and skilled operational leader for an expansive multi‑unit food & beverage program in an upscale resort and casino setting.


This position will oversee all culinary venues, concepts, and teams to ensure an exceptional and consistent guest dining experience.


This role is responsible for developing and executing a cohesive culinary vision across all restaurants, quick‑service outlets, private events and banquets, internal and external food service operations, VIP experiences, and large‑scale casino-driven food operations.

Requirements:

  • US Work Authorization is required; California residents strongly preferred
  • 8-10 years multi-unit culinary leadership experience in high-volume, yet high quality environments
  • Formal culinary education preferred
  • Advanced knowledge of modern and classical cooking techniques, menu engineering, recipe development, and food costing
  • Experience leading large, diverse culinary teams, including Executive Chefs, CDCs, Sous Chefs, and pastry/banquet departments
  • Demonstrated expertise in food cost control, labor planning, forecasting, and P&L management
  • Understanding of VIP, host‑driven, and loyalty‑tier guest expectations; experience in casino environments preferred
  • Willingness to work a varying schedule, including weekends, evenings and holidays as necessary
