Position Overview:
The Pastry Sous Chef under the direction of the Pastry Chef, supervises and coordinates creation and production of desserts, breads, sweets, chocolates, ice creams, etc. of the restaurants and outlets. The Pastry Chef reports to the Executive Chef, Executive Sous Chef and Pastry Chef. This position will be very hands-on in the beginning with the expectation that the candidate is actively involved in the production process, as well as plating on the line during service.
Pre-Opening Duties:

A successful Pastry Chef at Kneaders Bakery &amp; Cafe must possess:

<li>Proven track record of demonstrating super-hero abilities in the kitchen from following recipes to paying close attention to details to create one-of-a-kind pastries &amp; baked goods. Lifting large amounts of dough, flour, and other supplies all weighing 50 lbs. or more &amp; the ability to stand, lift, and mix is what our Pastry Chefs do every day. </li>
<li>The ability to work through change &amp; be able to be flexible all while keeping a close eye on what's cooking! </li>
<li>A love of rising before the sun comes up - all Pastry Chef shifts start at EARLY. You need to be an early bird! </li>
</ul>
A successful Pastry Chef at Kneaders Bakery &amp; Cafe need to be qualified with: 
<ul>
<li>1+ years of large- scale baking/pastry experience with experience in working quickly to decorate amazing pastries (this is preferred, not required!)</li>
<li>Attentiveness to compliance with local, state, &amp; federal regulations for food handler &amp; sanitation standards. </li>
<li> Formal baking/pastry education is a bonus; however, it is not a requirement for this position. </li>

Job Summary
The Pastry Sous Chef plays a key leadership role within the pastry kitchen, working closely with the management team to guide and support the hourly pastry staff through daily high-volume production. This hands-on position involves overseeing kitchen operations while ensuring strict adherence to company health and safety standards.
Daily responsibilities include active participation in production, team supervision, and administrative tasks. Production often involves preparing large batches of items such as cookies, brownies, custards, muffins, ice cream, Viennoiserie, and individual pastries.
The ideal candidate will have a working knowledge of ordering and inventory systems, along with a solid understanding of food and labor cost management, both of which are critical to achieving monthly and annual financial goals. A strong team spirit and the ability to cultivate a collaborative, positive, and supportive work environment are essential.
In the absence of the Executive Pastry Chef, the Pastry Sous Chef will assume full leadership responsibilities. Flexibility in scheduling is essential, as workdays are determined based on the needs of the business.
