Job Summary
As a Pastry Sous Chef with Wolfgang Puck Catering, you will combine classical pastry training with modern creativity to craft desserts that elevate every event experience. From sophisticated plated finales to large-format banquet displays and custom showpieces, you’ll bring artistry, precision, and leadership to our high-profile catering and event operations.
Key Responsibilities:
<ul>
<li>Partner with the Executive Pastry Chef and Executive Chef to oversee all aspects of&nbsp;pastry and dessert production&nbsp;for banquets, catering, and special events.</li>
<li>Develop and execute menus that balance&nbsp;classic pastry techniques&nbsp;with innovative flavor profiles and presentations.</li>
<li>Lead and train pastry cooks in the production of plated desserts, banquet pastries, breads, and specialty items.</li>
<li>Lead large-scale production schedules, prep lists, and event execution to ensure timely and magnificent delivery.</li>
<li>Oversee dessert displays, buffets, and showpieces with an eye for artistry, consistency, and guest impact.</li>
<li>Collaborate with the savory culinary team to compose cohesive, multi-course experiences that reflect Wolfgang Puck’s signature style.</li>
<li>Ensure adherence to food safety, sanitation, and quality standards across all pastry operations.</li>
<li>Assist with purchasing, cost controls, and vendor management to optimize quality and efficiency.</li>
<li>Contribute to the rollout of seasonal menus and signature Wolfgang Puck Catering pastry programs.</li>
</ul>
Preferred Qualifications:
<ul>
<li>Degree in Pastry Arts or Culinary Arts, or equivalent formal training, strongly preferred.</li>
<li>3–5 years of progressive experience in&nbsp;banquet, catering, or large-production pastry kitchens.</li>
<li>Mastery of&nbsp;traditional pastry techniques, including breads, laminated doughs, chocolate work, custards, cakes, and plated desserts.</li>
<li>Strong experience producing&nbsp;high-volume, event-driven pastry programs.</li>
<li>Proven ability to lead, train, and inspire pastry teams.</li>
<li>Knowledge of current pastry trends, flavor combinations, and presentation styles.</li>
<li>Proficiency with Microsoft Office and kitchen management systems.</li>
<li>ServSafe certification highly desirable.</li>

The Pastry Chef (Patissier) is primarily responsible for creating pastries, baking breads, and making layer cakes and pies by hand. The Pastry Chef is required to begin work very early in the morning in order to provide freshly-made, eye-catching, and delicious products. In order to do so, the Pastry Chef is very creative and is highly skilled in the baking process. He/She knows what tools to use to achieve consistently outstanding results. In addition, the Pastry Chef may manage junior kitchen staff members and ensures that the kitchen remains clean, safe, and organized. The Pastry Chef may also perform administrative duties such as preparing budgets and ordering pastry-making supplies.
